Gee's Millionaires Shortbread

A proper, unapologetically indulgent Scottish classic.

Gee’s Millionaire Shortbread starts with a rich, buttery shortbread base, baked until crisp at the edges and tender through the middle. It’s topped with a thick layer of smooth caramel before being finished with a generous coating of Belgian milk chocolate and hand-feathered with white chocolate.

The result is exactly what millionaire shortbread ought to be: crisp, buttery shortbread; soft, chewy caramel; and a generous layer of silky chocolate — three completely different textures in every bite.

The chocolate topping is finished by hand, with fine ribbons of white chocolate drawn through the milk chocolate to create the distinctive feathered pattern. No two trays are quite the same, and that’s rather the point. This is handmade confectionery rather than something stamped out by a machine.

We make Gee’s Millionaire Shortbread in small batches, using good ingredients and taking the time to get each layer right. It is rich, substantial and very much not interested in pretending to be healthy.
