The Bounty Hunter pairs a cloud-light milk chocolate cheesecake filling with a toasted coconut biscuit base that somehow manages to be both impossibly delicate and deeply satisfying — the kind of base that makes you wonder why anyone bothers with plain digestives.
The filling is smooth and mousse-like, carrying just enough chocolate richness to feel indulgent without ever overwhelming the coconut that runs through every layer. A dark chocolate ganache collar holds everything together at the rim, adding a bittersweet edge that keeps things from tipping into sweetness overload.
The top is finished with a generous snowfall of desiccated coconut, rosettes of chocolate cream, and generous chunks of Bounty bar scattered around the edge — crunchy, chewy, chocolatey, and completely at home here.
